Pitch bending would be weird, since it's reading the actual pitch of the note. If you bent a note, you'd likely just have the MIDI device change pitch when it came within a certain threshold of the other pitch, thus sounding angular, unless it's designed to give you essentially "automatic pitch bend" any time you hit a note to keep the pitch of the MIDI sample the exact same as the pitch of the string; real pitch bending would likely need to be accomplished by an outboard device.
That's probably a shitty explanation, but it's the only way I can think of.
Wonder if it can read the amplitude of the string vibration in order to detect velocity? I bet it can. No idea about modulation; would probably need an outboard pedal or something for that.
