    Exciting, tasty veggie food?

    Apparently it's not an oxymoron! Got a veggie staying for a few days...any suggestions on what to cook? I'm middling-to-average skillswise, so take it easy.

    No tacos. I mean proper food I can present on a plate and eat with a knife and fork, not more casual fingerfood like that.
