Disclaimer, I kind of phoned this one in, but it occured to me the other night that I hadn't made a quesadilla yet so I quickly grabbed some wraps and threw this together based largely on what I had on hand. Next time it'll be a little more intricate.
Let's startoff with a jumbo wrap, with a good bass coat of mozarella:
To that, let's add some black beans, simmered with garlic, salt, habanero chili powder, and cumin.
Over the top, some diced barbecued chicken grilled in Drew's homemade ancho chile BBQ sauce:
...and for good measure a dollop or two (orfive) of additional BBQ sauce for extra flavor.
Thenm Cholula. Not all that spicy, but SO tasty.
Another layer of cheese to seal:
...and fry it up in loads of butter.
And served up, with a side of salsa and a little bit of light reading.
Simple, but pretty tasty. No beer because I was crunching for my exam. Oh well.
