I think the sweet aromatic, almost licorice quality of tarragon throws me off from salsa, but hey, how were great things accomplished? From experimentation.Taragon is one of my favorite spices, I like to use it in weird places, and it most definitely worked in my salsa
If you like tarragon, try adding it to a lump crab bernaise sauce and topping that on some filets. I even go a further step and put a dab of sambuca in it. Panties drop.
