Can't speak to the iPad but jailbreaking the iPhone was great because I was able to ad a few extra functions like via programs like SBsettings (kinda like a customizable taskbar w/ "on and off" switches for various functions) and Winterboard (customizable icons and lockscreen widgets).
Like I said, I'm not sure how useful any of that is for the iPad but just the difference between applications I had access to from one to the other made it worth the change. I'd venture to guess there are some cool homebrew iPad apps.
