If one were wrap the pickup bobbin(s) with shielding tape, and use shielded conductor wires, would it be necessary to shield the pickup cavity? The control cavity would still need to be shielded though.

In my opinion, shielding the pickup cavity is pointless, because it doesn't completely encapsulate the pickup. With the coils and the wiring shielded, doing the cavity seems rather redundant.

Agreed. Cavity shielding will only increase overall resistance of the suit.
And I also would suggest using unshielded wire for wiring pots, switch, etc. if you've sheilded control cavity and the cover for it.
